The summer dinner course features seven dishes using ingredients from the Hokuriku region. The menu includes lamp meat of Noto beef from Ishikawa Prefecture and tartar of summer vegetables, secret bean Blute from Yamagata Prefecture, white shrimp tuile from Toyama Prefecture, sautéed red squid and Ezo abalone from Toyama Prefecture, and grilled Noto beef sirloin, among others.
